Everybody loves grilling, but not everybody loves grilling when cooking up items like Yakitori, kabobs, teriyaki skewers, Arrosticini, Souvlaki...(Let's just go with "meat on a stick") and the stick catches fire on the ends or the meats start dropping through the grill grates. This grill appears to be specifically designed to emulate the ethnic grills that allow the meats to cook on the grilling surface, while allowing the wooden sticks to float on both sides of the grill, maintaining their color and appearance as they would in a restaurant.
When setting this grill up, try to use lump or binchotan charcoal over charcoal briquettes, you'll get better heat for longer periods with less clean-up. You definitely want consistent heat across the entire cooking surface, light and heat your charcoal in a separate container if possible, then use a pair of tongs to arrange the hot coals in the grill for best results. If cooking for a large group, you may need to refill the grill more than once, it's the nature of the item. It is usually not necessary to add wood chips to add flavor, as the meat juices and marinades drip from the skewers, they'll flash off on the charcoal, adding distinctive flavors to your skewers.
I don't believe that this is an ideal grill to cook large quantities of bone-in meats; Its small size kind of demands smaller and thinner cuts of boneless meats that can be cooked quickly to maximize the smaller charcoal footprint. This grill would work very well for a pair of steaks; For larger quantities, move up to a full-size grill. There are plenty of online resources on how to prepare and cook skewered meats from across the world, and binchotan charcoal is easily available right here on Amazon. I'm very satisfied with this item and look forward to using it quite frequently.
