Rotisserie Herb Butter Whole Chicken
Ingredients
1 whole chicken (4–5 lbs)
3 tbsp unsalted butter, softened
3 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme
1 tsp paprika
1 tsp salt
½ tsp black pepper
1 lemon (cut in half)
Instructions
1. Prepare the grill
Set up your kettle grill with the rotisserie kit and preheat to medium heat (around 350°F).
2. Season the chicken
Mix butter, garlic, rosemary, thyme, paprika, salt, and pepper in a bowl. Rub the mixture evenly over the chicken.
3. Stuff the cavity
Place the lemon halves inside the chicken to add moisture and flavor during cooking.
4. Mount the chicken on the rotisserie spit
Secure the chicken with the forks so it rotates evenly.
5. Cook slowly
Turn on the motor and let the chicken rotate for 60–90 minutes until the internal temperature reaches 165°F (74°C).
6. Rest and serve
Let the chicken rest for 10 minutes before carving. Serve with grilled vegetables or roasted potatoes.
